Baked Leftover Risotto Balls
A quick search on the internet didn’t come up with any recipes that were exactly what I was looking for, so, after a few attempts I came up with my own. This is an easy way to re-use leftover risotto. If you wanted to you could place a small piece of cheese or cooked meat in the middle.
Ingredients
- Cold Risotto
- 1-2 Eggs
- Breadcrumbs
Method
- Preheat Oven to 220 degrees C
- Combine eggs and risotto If mixture is too sloppy also add some breadcrumbs
- Shape mixture into balls using cupped hands. if there are any lumps of cheese make sure that they’re inside of the ball.
- Roll balls in breadcrumbs
- Arrange balls on baking sheet. Optionally drizzle the balls with extra-virgin olive oil
- Bake for 20-25 minutes until golden on the outside and hot in the middle
