Baked Leftover Risotto Balls

A quick search on the internet didn’t come up with any recipes that were exactly what I was looking for, so, after a few attempts I came up with my own. This is an easy way to re-use leftover risotto. If you wanted to you could place a small piece of cheese or cooked meat in the middle.

Ingredients

  • Cold Risotto
  • 1-2 Eggs
  • Breadcrumbs

Method

  1. Preheat Oven to 220 degrees C
  2. Combine eggs and risotto If mixture is too sloppy also add some breadcrumbs
  3. Shape mixture into balls using cupped hands. if there are any lumps of cheese make sure that they’re inside of the ball.
  4. Roll balls in breadcrumbs
  5. Arrange balls on baking sheet. Optionally drizzle the balls with extra-virgin olive oil
  6. Bake for 20-25 minutes until golden on the outside and hot in the middle
